The other week I was reading thru my google reader and I came across this recipe on off of broadway. I thought it looked delicious and just had to try it out for myself. Thanks Amanda!
1/2 red onion chopped
2 cloves garlic
1.5 tsp fresh ginger
3 tbs curry paste
14 oz can of diced tomatoes
1 c water
14 oz can of chickpeas
1 lb of fresh baby spinach leaves
fresh cilantro chopped
Salt and pepper to taste
1. In a skillet heat oil and saute onion, garlic and ginger until golden
2. Add curry paste and mix all together. Cook a few more mins.
3. Add diced tomatoes, water and chickpeas and bring to a boil. Reduce heat and simmer letting sauce thicken up a little about 10 mins.
4. Right at the end add spinach and cilantro. Cook just till wilted. 1 to 2 mins.
Serve over some Jasmine Rice with some Naan.
MMMMMmmmm so delicious and simple!
I wish I wasn’t allergic curry because this looks delicious.
Where do you buy your curry paste?
so glad you liked it!!! i’ve made it so many times this winter. there’s nothing more cozy than a nice curry dinner on a cold day 🙂
This looks and sounds absolutely delicious- I’m bookmarking it for when I go home- I loveee curry chana (what I call chick peas, my family is West Indian) and this sounds like a great spin on it
I love anything with chickpeas in it! Especially when it involves curry. i will definitely have to try this recipe.
This looks like my perfect meal! Thanks for sharing the recipe, I will definitely be trying it out soon!
this looks yummmmy! i’ve never cooked w/ curry before, so can you substitute curry paste w/ curry powder?? i have everything to make this except the paste! 🙂
This looks delicious. We love to make curries.
But I really love your bowls! Where are they from?!?
how funny! I made chickpea tikka masala curry last night for my boyfriend and I, with a side of spinach : )
Yum…. I might just have to make this for dinner tonight!. I actually just finished off an amazing quinoa and black bean salad that I made yesterday morning. You should try it out. I got the recipe from the vegan blog http://www.ohsheglows.com . I half ed the recipe though because I knew I couldn’t eat all of it in 2 days.
amazing! love that you paired this with Naan (and you got the whole wheat kind!)…most people I know have never heard of it.
I definitely want to make this. We are big curry fans, even the kids. Thanks!
Oooh this reminds me chana masala- my favorite Indian recipe. Will have to try this.
