Last Nights Dinner | Lunch Edition

I have been trying to get in the habit of making a nice lunch for myself. It makes everyday a little better when you sit down in the middle of the day to eat something delicious. Since Rowan was born I’ve found myself so busy that it will be like 5pm and I’ll realize I haven’t eaten anything. So bad for you!

I started looking back thru some old Last Night Dinner post and I came across a few that I think will make great lunches…

What are your favorite lunch foods?

  1. The apple grilled cheese and the pizza look delicious! I usually pack a salad for work with chicken, cucumbers, tomatoes, radishes and whatever other veggies I have. Sometimes I splurge and throw in avacado and feta cheese. It’s so easy to make a huge salad at the begining of the week and then pack each individual portion to take to work.

  2. Oh, the sauteed kale looks especially good! I have been on a kale kick lately, yumm!! It is so good in soup! Soup is one of my favorite things to have for lunch, or a sandwich!!

    My favorite lunches usually involve beast salads (big mommas) with lots of seeds, veggies, a lil fruit, and some sort of meat or cheese. But today I did leftovers- panko chicken with kale and a little quinoa- yum!!

  7. Definitely going to try your kale and rice recipe!! And I made this recently and it was so gosh darn delicious, I have to share it with you! It has beef in the recipe, but maybe you could sub it with a veggie-alternative or add kidney beans? It was so good, and so simple!   9. All of these look so good that they’re making me hungry right now (and I just ate! :P). This year, it’s my goal to eat healthier – read: more fruits and veggies – and any of these recipes would be a good step in the right direction. The apple grill cheese and nectarine pizza especially have caught my attention, that I think they’ll soon be making an appearance on my plate! 🙂

  12. I love some greens, like a salad or a roasted veg like brussel sprouts and then a grilled cheese or Morningstar buffalo wings!
    OR a roasted veg crepe!
