Last Nights Dinner

Green Apple and Gorgonzola Pizza
MMm I have totally been in love with pizza lately. I crave it all the time. I could eat it for breakfast, lunch and dinner. Anyways, I wanted to be a little more adventurous with my pizza making so I tried a different kind of recipe than your traditional sauce and cheese. It was very good. I don’t think I could eat a ton of it at once but a piece with some white wine was very delicious.

whoops- my onions got a little crispy. I cooked it a little to long as I had to wait for my thicker crust to cook. Lesson learned.

1 tablespoon oil
1 red onion (sliced)
1 tablespoon balsamic vinegar
1 pizza dough (bought already made dough at store)
3/4 cup gorgonzola cheese (crumbled)
1/2 cup of italian shredded cheeses (pre packed at grocery store)
1 granny smith apple (cored and thinly sliced)
1/4 cup Pecans (chopped)

1. Heat the oil in a pan.
2. Add the onion and pecans and saute until onions are tender and caramelized, about 15-20 minutes.
3. Mix in the balsamic vinegar and cook until it has evaporated.
4. Spread the onions, gorgonzola, apple and pecans out on the spread out pizza dough.
5. Bake in a preheated 500F oven until golden brown, about 5-10 minutes.

  1. Looks delicious!

  2. Everytime I say that I don’t feel like cooking, my husband says “lets order pizza”. I do find it more delicious when I make it though.

    Merry Christmas Jen.

  3. oh my gosh this looks DELICIOUS! I must make it!

I am so pissed that I used up my big bag of granny smiths making apple pies this weekend!

  4. Yummy!

You should think about gathering all your recipes & photos and publish a cookbook as a gift to friends & family.

  5. This looks amazing! I wish I could cook things like this. Brett is the pickiest eater alive. It’s like.. kid’s menu choices and that’s it! Haha!

  6. That looks so yummy. I already have some of those ingredients so I’ll have to try it out.

  7. Isn’t it awesome that you can put almost anything on a pizza? I’m so glad that people are coming up with crazy new pizza ideas. I had a taco pizza the other day. Amazing.

  8. That pic made me instantly STARVING.

  9. get out of here…that look ridiculously amazing.

  10. That looks awesome. My favorite is pesto pizza with artichokes, spinach and onions. I could eat that till kingdom come.
