So there was NOTHING in our fridge last night- we were suppose to go grocery shopping together after going to the gym but we were both not feeling it so instead it was a lets see what I can make with all the scraps around. I ended up making a Fried Rice with lots of veggies in it. It ended up being really good and I got rid of all the veggies that were about to go bad. Its hard using up everything before it goes bad when there is only 2 people.
Ingredients:
4 tbsp. Peanut Oil
Peanuts
1 Clove Garlic
2 eggs
3 cups of cooked Brown rice
Carrots
green onions- chopped
Peas
Snow peas (pods)
Cauliflower- chopped
6 Tbsp. Soy Sauce
1 tsp. Sugar
Directions:
HEAT 1 Tbsp. of the oil in large skillet or wok. Add eggs; stir-fry 1 to 2 min. or until set. Remove egg from skillet; cover to keep warm.
ADD 1 Tbsp. of the remaining oil to same skillet; heat 30 sec. Add peanuts, green onions and garlic; stir-fry 2 to 3 min. Add Carrots, Cauliflower, peas, pea pods, Stir-fry till heated thru or at softness you like your veggies. Remove from skillet. Heat remaining 2 Tbsp. oil in same skillet. Add rice; stir-fry 3 min.
RETURN egg and peanut/veggie mixture to skillet. Add soy sauce and sugar; mix well. Cook until heated through, stirring constantly.
haha! we did the same thing last night, but it was stirfry instead of fried rice!!!
hahah fried rice and veggie is what I always make when low on food.
that and canned (gasp!) soup.
I think when you’re out of food, it really does bring out creativity in cooking. Some of my favorite meals have been happy accidents due to experimentation.
You reminded me though…we’re out of food too!
This looks great, definitely going to try it.
Wow! I need to try this, looks delicious 🙂
yum this looks so good! I always make this out of leftovers too! (esp since I always make some much extra rice!)
Oh, crikey! This is exactly what I was craving tonight! (Wish I’d found it before the Tyson nuggets.) I’m so happy I found your blog, you’re adorable! Such a cute girly style, can’t wait to be a regular reader. 🙂
