I am guest blogging over on the Ruche blog today! I am sharing my favorite summer recipe. Mmmm! Strawberry/Kiwi Summer Rolls!! They are delicious and perfect for a summer evening appetizer. Head over to the Ruche blog to find the recipe and to say hi! It’s super easy!
Here is Rowan’s new favorite! Homemade carrot hummus!!! It is super easy to make and a good food to let them explore self eating. It sticks to the spoon, so it doesn’t instantly fall off as soon as they fling it around.
Ingredients:
1 cup chickpeas (cooked or canned)
1 cup carrots (steamed and very soft)
1/4-1/2 clove of garlic (be careful of babies sensitive taste buds)
2 – 4 Tbsp Olive Oil
1 tsp lemon juice
salt to taste
Directions:
Place all ingredients, except olive oil, in a food processor and puree. Scrape down the sides and mix. Through the hole on the top of the food processor, add olive oil until the hummus is smooth. Taste and add salt if needed.
