RunningWeek2

This week starts the next phase of training. The runs during the week get a little longer and we reach 10 miles on the long run. There is no looking back from here. I am excited. I am pumped. I feel stronger than ever. I owe so much of that to my dear friends Carrie and Erin. They are my running buddies. I run every run with them. My last marathon I trained by myself and I liked it. It was empowering, but this time I feel like I needed the support. These ladies are truly amazing. They make me look forward to running. We are doing this together to help raise money for Love 146. We are unstoppable.
Look how cute they are on our snowy 8 mile run last Saturday.

I have gotten emails about what I eat as a vegetarian and about eating for running. Here are a few things that I eat the morning of runs. I try to eat simple foods that don’t hurt my stomach at all. It could be different for every person but this is what keeps me full and fueled with energy.

breakfastfoods

Toast with peanut butter. Morning Star Maple Favored Sausage. Pineapple Chobani Yogurt.
Lots of protein!

sadly i started a new job that takes up tons of my time and gave up training for the time being :( i’m happy to see you stuck to it!! and as a fellow vegetarian, i totally agree with the peanut butter toast breakfast…

You’re doing so great Jen! I remember being jealous when you posted this picture to twitter because I wish I had running buddies. I used to be on all team sports and that support system definitely comes in handy. Glad for you that you have it!

also…now I’m hungry. Toast, almond butter (allergic to peanut), honey, banana. Done.

I like to sprinkle some ground flax seed on my pb + toast, gotta get in that healthy good stuff whenever possible. :)

do you know about these blogs? they are vegan and very active with cycling, running, etc. and they do lots of food posts:

in this day and age, you’d think there would be enough info out there about vegetarian and vegan diets. i still forget that most americans eat way too much meat, fast and processed food. :/

Awesome to see this post about being a vegetarian runner. :) Yes I agree, toast and peanut butter is the best thing to eat pre-run or race! Sometimes I substitute for a bagel, but you can’t go wrong with these foods. Good luck with your training!

Thanks for posting this! Even though I don’t know if I could commit to being 100% vegetarian, I am trying to eat vegetarian as much as possible. I didn’t know about Morning Star!

Thank you so much for organizing this whole Love 146 effort!

Ah, as a vegetarian, Ezekiel bread + peanut butter and Morning Star Farms sausages are my saving grace!

  8. I get the same questions as a vegetarian. Those are my go to pre-workout breakfast choices too! Except, I usually spread hummus on bread instead of peanut butter. Good luck training!

I am training for a marathon too…and one of my friends is an Ironman. He started eating vegetarian last year and has better marathon times, less injuries and more energy. I love oatmeal, bananas and a glob or peanut butter. YUM!
